Renovated in 2023, the room now features clean, simple lines and muted hues. Chef Nomura, who moved to Taiwan years ago, still serves several set menus, with Edomae sushi being the main event. A mix of Koshihikari and Nanatsuboshi rice is cooked in Mount Fuji spring water and dressed in a blend of akazu and regular sushi vinegar. To sample a greater variety of sashimi, opt for the menus at higher prices.
