The young head chef, who used to work for a hotel in Shanghai, updates traditional Jiangzhe cooking with creative twists. Pre-order his Fukubukuro Yanduxian – tofu skin pouches stuffed with ground pork and shepherd's purse in a rich broth of cured and fresh pork with bamboo shoots.
