In this simple yet attractive restaurant located in an alleyway close to the cathedral, gastronomy is viewed as its own language and each of its dishes as a sentence (“frase” in Spanish) that tells a story which, where possible, is connected to personal memories. The project is headed by María Egea and Marco Antonio Iniesta, with the former in charge of the front of house and the latter the kitchen. The elegance with which the concepts of roots and tradition are brought up to date comes as a pleasant surprise and is showcased on a concise à la carte and a tasting menu entitled Tierra. Dishes you are likely to find here include the delicate Abuelo Ruperto cheese fritter with a quince emulsion and beetroot; the surprising and refreshing “mojete” of Murcia tomato, with green herb oil, foam and tuna belly; and other dishes full of flavour such as the red Águilas prawn tartare with codium and a “caldero” jus. Whatever you order, you won’t be disappointed.
