A restaurant with an industrial vibe in the heart of the city’s Chueca district, featuring an open-view kitchen impressively and enthusiastically run by Juan D'Onofrio, a young Argentinian-born chef who is very happy with his life in Madrid, especially as it is said that “this is the city where everyone, including chefs, find their rightful place”! The aim of the contemporary cuisine here is to showcase the full nuances of the Mediterranean, to which the chef adds interesting Argentinian influences, with a strong focus on fire and the grill, and the use of aged fish and meat in which every flavour is emphasised. Dishes that made a particularly strong impression included the highly original shrimp, banana and Palo Cortado sherry starter, and the pigeon served as three different dishes that make full use of every part of the bird. A small adjoining, and more intimate, annexe (La Trasera de Chispa Bistró) provides another dining option here.
