Situated in the centre of the city, Arkhe features a discreet façade and an interior where the dominant decorative themes are open stonework and tasteful minimalism. The cuisine here is the realm of chef João Ricardo Alves who, having worked in various kitchens around the world, decided to open this new space with a focus on vegan/vegetarian cooking, accompanied by Alejandro Chávarro (sommelier and front-of-house manager), who also boasts extensive international experience. Alves’ cooking is showcased on three menus at lunchtime (but just one midweek) and two dinner menus, all of which are created using a combination of seasonal ingredients, plentiful flavour and impressive technical skill.
