One of Hamburg's classic hotels, the legendary Fairmont Hotel Vier Jahreszeiten with its view of the Binnenalster lake, is home to this stylishly elegant restaurant. The top-notch cuisine is inextricably linked with the name Christoph Rüffer, who has been the chef here for over 20 years. His dishes follow a clear idea and retain their identity despite considerable technicality. He showcases the ingredients and incorporates meaningful contrasts without fussiness. The set menu comprises six courses plus several dishes to swap out or add on. The "Rock red mullet with grilled paprika sabayon, crocus polenta & pastis sauce", for example, combines the fantastic flavours of France with artisanal precision. The sophisticated desserts by patissier Roshlee Cardoso are also wonderful! Proficient service from the classic brigade. Outstanding wine list; the wine pairings for the set menu come highly recommended. For a little luxury… world-class wines are also served by the glass.
