One of Hamburg's classic hotels, the legendary Fairmont Hotel Vier Jahreszeiten with its view of the Inner Alster Lake, is home to this stylishly elegant restaurant. The top-notch cuisine is inextricably linked with the name Christoph Rüffer, who has been the chef here for over 20 years. His dishes follow a clear idea and retain their identity despite considerable technicality. He showcases the ingredients and incorporates meaningful contrasts with minimal fuss. The set menu comprises six fantastic courses – think saddle of venison with Hamburger Speck (cured pork belly), beetroot, balsamic cherries and smoked pistachio cream, which combines aromatic and sweet fruity notes with the fantastic flavour of this game meat. There are also several dishes to swap out or add on. The sophisticated desserts by patissier Roshlee Cardoso are also wonderful! Proficient service comes from a classic brigade. Outstanding wine list; the wine pairings for the set menu come highly recommended. For a little luxury… world-class wines are also served by the glass.
