The menu at this iconic restaurant is titled 'Sensorium' and is a 'journey through the mind' which explores how we gather sensory impressions as we eat and turn them into memories. The dishes bear all of Heston Blumenthal’s hallmarks: innovative, playful and multi-sensory – epitomised by the signature ‘picnic’ dessert that comes complete with an edible blanket and a ‘spam sandwich’ made of almond sponge and strawberry ice cream.
