Chef Christopher Krinsky has created something offbeat at this casual spot, but the two cuisines are woven together seamlessly. Bold, spice-driven cooking is the name of the game here. Take the mole tsukemen, a fresh mole negro that has been thinned down to a broth and served next to a tangle of noodles and chicken for dipping. Rich and flavorful, it's savory, spicy, and sensational. If ramen feels wrong on a hot Texas day, opt for aguachile masemen, a cold ramen with thick noodles, poached shrimp, and vegetables in a bright, refreshing aguachile. Round out the meal with karaage or one of their terrific lengua tacos.
