It's far from traditional nigiri; instead find whimsically embellished, playful pieces, as in a spicy margarita-inspired Japanese hamachi topped with finely diced jalapeno, grated lime zest, and sea salt; or the wagyu embellished with grated egg yolk evoking "steak and eggs."
