Hervé’s three co-owners are heavily involved in the smooth running of this modern restaurant, situated a little way from the centre but well connected thanks to its location next to the Petralona metro stop. Herve Pronzato is the French-born executive chef who has lent his name to the business, ably assisted by Grigoris Kikis (a young Greek chef who is constantly seeking excellence in his cooking) and George Efthimopoulos (an expert in hospitality and the restaurant’s general manager). One of the special features of this young, informal eatery is the elegant French-style yet Japanese-inspired counter where guests can watch the chefs at work (the latter serve dishes personally and are happy to explain their preparation in detail). The cuisine is centred around a single tasting menu featuring fusion dishes influenced by French, Asian and Italian cooking. You’ll need to book ahead, and when you do you’ll receive a digital code that will let you through the front door!
