Peter Fridén, of YOSO fame, has brought his "New Nordic Japanese Cuisine" to the 17C Alte Kanzlei, the interior of which has been tastefully designed by Axel Vervoordt. In a small side street adjacent to the boutique hotel PURS, this beautiful building houses a chic restaurant decorated in muted tones. Inside, the eye is drawn to the artwork on the walls and the open kitchen, visible through a glass sliding door, where Fridén brings together three different cuisines. Born in South Korea, he grew up in Sweden, and is schooled in the French culinary arts. His six-course tasting menu (vegetarian version also available) reflects his personality with an intriguing fusion of Asian-Japanese, Scandinavian and French elements. An appealing case in point is his combination of dashi chawanmushi, delicately smoked Oscietra caviar, Mangalitza bacon broth with a subtle smoky flavour and a hint of lemon salt. Accompanied by a carefully curated selection of wines by the glass (over 1 000 labels). The sake and kombucha selections are also impressive.
