Sebastian Baquero Garces has taken over the reins at this intimate designer restaurant, which is every bit as upmarket as the NH Collection Amsterdam Barbizon Palace, where it is located. A champion of the farm-to-table movement, the chef is passionate about using the freshest locally sourced ingredients, and his creativity shines through in every dish. Think thinly sliced hamachi and zolderspek (aged smoky bacon) with a subtly smoky bacon jus infused with dashi and soy. His cooking is intricate and sometimes complex. And if you would rather not commit to the set menu, you can simply dine à la carte.
